Rouxster’s Cookhouse offers Nashville-style chicken and fish comfort food created by local chef John Meyer.

At the Rouxster’s Cookhouse counter, customers can order from a selection of sandwiches such as the oven-roasted or Nashville hot chicken and fried catfish, just in time for the Lenten season. There is a grilled Jamaican jerk chicken sandwich with Meyer’s special jerk sauce and shrimp po’ boy. All sandwiches feature a special sauce, coleslaw and pickles in true Southern style. All seasonings, batters and breading are created by Meyer.
Turkey chili and freshly-made chicken gumbo, along with sides such as smoked gouda mac and cheese, potato salad and collard greens are on the menu, as well as banana pudding, bread pudding and sweet potato pie.
A grand opening was held Friday, March 29, from 11 a.m. to 1 p.m. at the Bronzeville Store.
Rouxster’s Cookhouse in Mariano’s stores will be open from 10 a.m. to 8 p.m. daily. Mariano’s Park Ridge is located at 1900 South Cumberland Avenue. The Bronzeville store is at 3857 S. Martin Luther King Drive.
Meyer, who is chef and owner of BJ’s Market & Bakery, is a graduate of Chicago State University and the Culinary Arts Program at Washburne Trade School in Chicago, where he was classically trained in French-American cuisine.
Meyer opened BJ’s Market & Bakery in May 1997. Since opening, BJ’s Market has expanded its services to include catering and delivery. In 2016, Meyer and his partners started Blueprint Foods, a food production facility for hot bars in grocery stores.
